In 1994, the NSW Healthy Canteen Association unveiled the tuck shop of the future. The concept design predicted canteens would become mini McDonald’s restaurants, albeit with healthier food. Tuck shops would be slick privatised operations, employees in uniforms would replace volunteer parents and canteen revenue was predicted to surge past $1 million a day as healthy food boomed.

Almost 30 years later, there are no McDonald’s-style fast food restaurants and tuck shop profits are decidedly lacklustre. Health bureaucrats have won the battle on junk food, successfully stripping unhealthy snacks from sale with the introduction of a policy called the Healthy School Canteen Strategy six years ago.
