Smoked BBQ Pork Ribs needs a Texas Dry Rub

Texas Dry Rub

Smoked Pork Spare Ribs using Rational-VarioSmoker Warm Smoker

(Number of portions: 4)

Texas Dry Rub Ingredients

  • 1 cup of Casacabel chilli powder
  • 1 cup Ancho Chilli Powder
  • 1 cup Smoked Paprika
  • 1/4 cup Ground Caraway
  • 1/8 cup Ground Coriander
  • 1/8 cup Black Pepper
  • 1/8 cup White Pepper
  • 2 tbsp Cinnamon
  • 1/4 cup Garlic Powder
  • 1/4 cup Onion Powder
  • 2 tbsp Cayenne Pepper
  • 1 cup Sugar
  • 3/4 cup salt

Method

  1. You can place your food product in the cooking chamber in different ways; this means you can cook it lying down or hanging up (e.g. for smoked trout).
  2. To achieve uniform transfer of the smoked flavour, leave sufficient spacing between the individual products.
  3. You can marinate your food product before smoking; ensure you do not have too much liquid.
  4. When cooking marinades with a high sugar content at a high temperature, your finished products will result in a darker colour

    3 Racks Baby Back Pork Ribs

  1. Rub the ribs and place them in your rib rack

  5. fill the VarioSmoker with wood chips and place it on the top shelf, switch it on.

  7. When you start to see smoke load your ribs and let them smoke for 60 minutes
  8. After those 60 minutes start the cooking process and let it go overnight.
  9. In the morning, cut your ribs and marinate in BBQ sauce, glace them using Pan fry brown 3 for 8 minutes.
