Texas Dry Rub Ingredients
- 1 cup of Casacabel chilli powder
- 1 cup Ancho Chilli Powder
- 1 cup Smoked Paprika
- 1/4 cup Ground Caraway
- 1/8 cup Ground Coriander
- 1/8 cup Black Pepper
- 1/8 cup White Pepper
- 2 tbsp Cinnamon
- 1/4 cup Garlic Powder
- 1/4 cup Onion Powder
- 2 tbsp Cayenne Pepper
- 1 cup Sugar
- 3/4 cup salt
Method
- You can place your food product in the cooking chamber in different ways; this means you can cook it lying down or hanging up (e.g. for smoked trout).
- To achieve uniform transfer of the smoked flavour, leave sufficient spacing between the individual products.
- You can marinate your food product before smoking; ensure you do not have too much liquid.
- When cooking marinades with a high sugar content at a high temperature, your finished products will result in a darker colour

Method Overnight soft cooking
- Rub the ribs and place them in your rib rack
- Place your Pork Ribs in rack
- fill the VarioSmoker with wood chips and place it on the top shelf, switch it on.
- When you start to see smoke load your ribs and let them smoke for 60 minutes
- After those 60 minutes start the cooking process and let it go overnight.
- In the morning, cut your ribs and marinate in BBQ sauce, glace them using Pan fry brown 3 for 8 minutes.
- Serve these delicious Pork Ribs
