So let's Start with The Marinade

Lemon and Pepper Mainade

SCK Combi Oven Recipes - Roasted Lemon and Pepper Chicken

(Number of portions: 6)

  • 1 * 1.8 to 2.2kg Chicken (whole)

Lemon and Pepper Marinade Ingredients

  • 2 tbsp Kosher Salt
  • 2 medium lemons, juiced
  • 1/2 tbsp Olive Oil
  • 1/2 tsp Dried Thyme
  • 1 tbsp Black Pepper
  • 450g Eschallots
  • 1/2 to 3/4 cup of your Chicken Stock (Reduced Sodium)
  • 1/3 cup Dry White Wine

Roasted Lemon and Pepper Chicken Method

  1. Clean the Chickens
  2. Dice Eschallots
  3. In a bowl, Mix in all the marinating ingredients. Taste and season if necessary
  4. Place your chicken into a Vacuum Seal bag Pour your Marinade into bag
  5. Massage the Marinade around the Chicken. Make sure the chicken is covered with marinating liquid.
  6. Seal Chichen & Marinade in the bag with your Vacuum Sealer
  7. Marinate the chicken overnight in your fridge
  8. In the morning go to your Rational Combi Oven. Go to poultry and press 'roast'
  9. Push the chickens onto the Chicken and Duck Superspike and roast until cooked
  10. Serve with Potatoes or other Vegetables

Roast Potatoes

Roast Potatoes, Ingredients

  • 1.25kg Dutch Creams Potatoes
  • 1/2 tbsp Olive Oil
  • 1 Head Garlic
  • 30g Rosemary Sprigs
  • Salt

Roast Potatoes Method

  1. Cut the potatoes so they have lots of sharp edges
  2. Split garlic into cloves and bashed with the flat part of a knife or by hand
  3. Place your Dutch Creams Potatoes into a Rational Granite - enamelled containers 20mm deep
  4. Coat potatoes with small amount Olive Oil add Garlic & Rosemary
  5. You will be able to Roast up to 60kg of Potatoes in a one batch
  6. Serve potatoes
