Australian Food Safety Standards mean that food businesses are obligated to produce food that is safe and suitable to eat. The aim of Food Standards is to lower the incidences of food borne illnesses. Inside these standards is also contained health and hygiene obligations for food handlers. The better the health and hygiene practices of staff the safer the food.

So, what's the problem?

In food, bacteria that may have survived the cooking process will start to multiply as the hot food cools down. These bacteria will continue to multiply when chilled food is reheated to temperatures above 50°C. Bacteria will stop multiplying when the food reaches 60°C. and above. The longer the reheating process takes, the greater the number of bacteria. Temperatures between 50°C to 60°C is referred to as the 'Danger Zone'.
