A bain-marie, also known as a water bath or double boiler, and is a piece of equipment used sometimes in cooking but more often in the displaying of hot food for sale. They are available as benchtop models or freestanding, and can be located in the kitchen or front of house. Typically, you might expect to see a bain marie in a buffet line or in many assorted takeaway shops.

A bain marie is an ideal piece of equipment for use in commercial environment as they have the ability to keep large batches of food warm and appetising. They are designed to provide a reliable and consistent heat which maintains the temperature of hot food to keep it at a precise temperature. For best results the food should be placed in to the bain marie direct from the oven or stove top or other cooking source.

Bain Maries are available in either wet heat or dry heat versions. As they usually hold food in gastronorms, you can configure the food according to the meal service, whilst quickly swapping out pans which are running low.

If you are cooking for a function, you'll find a bain marie is ideal for back of house use as it allows you to keep food warm for extended periods ready for service.

A bain-marie is also used to melt ingredients for cooking, such as chocolate.

What is the 4 hour/2 hour rule with food?

The 4 hour/2 hour rule is designed for ready to eat high risk foods that have been held at temperatures between 5°C and 60°C.

If the food has been held at temperatures between 5°C and 60°C for a total of:

  • • less than 2 hours - the food must be refrigerated immediately.
  • • longer than 2 hours, but less than 4 hours - the food must be used immediately.
  • • a total of 4 hours or longer - the food must be thrown out.
