It is Anzac Day, so how do you cook the perfect Anzac Cookie?

Turbofan Convections Ovens

Baking in a Turbofan convection oven makes it easy to bake up quality consistent biscuits every time.

Crunchy and delicious, Anzac biscuits made with oats are a lower GI alternative to many packet biscuits and are cheap to make. Containing coconut, golden syrup and butter, these biscuits do not use egg as a binding agent.

Ingredients

  • • 4 cups rolled oats
  • • 4 cups flour
  • • 4 cups coconut
  • • 3 cups sugar
  • • 500g butter
  • • 8 tbsp golden syrup
  • • 2 tsp baking soda
  • • 4 tblsp boiling water


Method

  • • Turn Turbofan Convection Oven, select Convection mode, high fan speed and temperature 160°C.
  • • Lightly grease oven trays.
  • • Place oats, flour, coconut, sugar in big mixing bowl.
  • • Melt butter and golden syrup in saucepan. Take off heat.
  • • Mix baking soda and boiling water in a cup.
  • • Add to melted butter mixture in the pan. Quickly add to big mixing bowl and mix well.
  • • Roll table-spoonful's of the mixture into balls. Place on trays 5cm apart. Press lightly with fork.
  • • Bake for 20 minutes.
  • • Serve hot today on Anzac Day.
